KIRK’S COMMENT: Coffee is a “Jekyll and Hyde” food with regards to wellness and longevity for me and to many people. I envy Dr. Safe that he can consume 5 shots of espresso in the day without any side effects. I really love the bitter coffee taste of espresso but my body couldn’t take the 5 shots of espresso.

It’s not all “espresso” that keeps Dr. Safe vibrant, incredibly productive, coherent and brilliant as an 87 year-old active researcher running a busy lab. He eats a balanced diet with lots of vegetables, has a great relationship, takes vitamins, vitamin C and an aspirin daily for 50 years and continues to work full time at something that he enjoys doing and is constantly “brain challenged” in a good way. I don’t know what his exercise and sleep routines are but he’s got a sense of purpose and reason to get up in the morning. Health Recommendation: “Just keep doing what you are doing!” and have gratitude for his life which he has.


Kirk: The Flip Side of Coffee on Body Symptoms: As much as I like the espresso taste if I didn’t know where these symptoms came from (******) when I drink between 1-2 cups of coffee (black) daily, usually when I am tired from driving distances and or working late/ getting up early, I could have easily seen 5 or so specialists over the years for coffee related symptoms if I didn’t know better.
1) Esophageal spasm – (cardiologist, gastroenterologist) – feels exactly like a heart attack;
2) Severe nocturnal leg cramps (PCP);
3) Migraine headaches (PCP, neurologist);
4) Palpitations (cardiologist); IBS, lose stools (gastroenterologist);
5) Poor sleep (sleep specialist, sleep study);
6) Skin rash (dermatologist); and
7) Frequent urination, especially at night (urologist).

Because I usually stay between a half to one cup of coffee per day or 1 shot of espresso over ice with a decaf espresso shot I do fine. But if I have a long distance driving trip or have been working late and get into the 1-2 cup of coffee per day range I can get any or all of those symptoms above.

But the key is I know that. So I don’t have to see a doctor for it. I just have to back off and suffer some discomfort till it/they go away.

So I am thrilled for Dr. Safe that he can live such a productive and contentful life with 5 shots per day of espresso, but a week to 2 weeks off from all caffeine for many of you will show improvement in some very annoying and sometimes very severe symptoms…

This is why I recommend 3-4 times per year the fasting mimicking diet (prolonLife.com ) and/or taking two weeks of eating a whole food elimination diet (any WHOLE food that you know you don’t react to) and additionally staying off completely for 2 weeks all dairy products, wheat products, eggs (if you are eating more than 2 x per week), added sugar, coffee/caffeine and alcohol. I guarantee more than 50% of this group will notice some distressing symptom (s) go away or be dramatically reduced. Then when you reintroduce your normal foods PAY ATTENTION! You are going to learn some very valuable things… and save 1000’s of dollars, doctor visits and needless medications…and suffering!
